Delightful cookies with a flaky, buttery texture filled with sweet brown sugar and finished with a creamy icing.

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar cinnamon filling or preserves
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Combine the dry mixture with the wet ingredients, stirring until combined.
  6. Roll out the dough to about 1/4 inch thick, then cut into rectangles.
  7. Add a small amount of filling in the center of half the rectangles.
  8. Top each filled rectangle with another piece of dough, sealing the edges with a fork.
  9. Bake for 12-15 minutes or until golden brown.
  10. Let cool completely, then mix powdered sugar and milk for icing, and drizzle over cookies.

Notes

Ensure butter is at room temperature for easy creaming. For added texture, consider mixing in nuts or chocolate chips.
