A delightful dish combining seared chicken with a fresh tomato and basil mixture, topped with melty mozzarella cheese.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper and sear in olive oil for 2-3 minutes on each side.
  3. Mix diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and a pinch of salt in a bowl.
  4. Assemble the seared chicken in a baking dish and spoon the tomato mixture on top.
  5. Add shredded mozzarella cheese over the chicken and tomato mixture.
  6. Bake for 20-25 minutes until the chicken is cooked through.
  7. Serve hot and enjoy!

Notes

For added flavor, marinate the chicken in balsamic vinegar for a couple of hours before cooking. You can use chicken thighs for a different texture.
