  • 2 tablespoons buffalo sauce
  • 2 large potatoes, diced
  • 2 cups shaved Brussels sprouts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil, sprinkle generously with salt and pepper, and spread them on a baking sheet.
  3. Roast the potatoes for 25-30 minutes until crispy.
  4. Cook the chicken bites according to package instructions, then toss in buffalo sauce.
  5. Sauté the shaved Brussels sprouts in olive oil for 5-7 minutes until tender.
  6. Assemble the bowl starting with crispy potatoes, followed by buffalo bites and sautéed Brussels sprouts.
  7. Garnish with fresh parsley and serve warm.

Notes
