A cozy casserole that combines tender cauliflower and juicy chicken with a spicy buffalo sauce, topped with creamy cheese for a comforting dish.

  • 1 head cauliflower, chopped
  • 2 cups cooked chicken, shredded
  • 1 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cream cheese
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • Olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the chopped cauliflower, shredded chicken, buffalo sauce, cream cheese, half of the shredded cheese, green onions, salt, and pepper in a large bowl until combined.
  3. Transfer the mixture into a greased casserole dish, spreading it out evenly.
  4. Sprinkle the remaining cheese generously over the top.
  5. Bake in the preheated oven for 25-30 minutes, until bubbly and golden.
  6. Let the casserole cool for a few minutes before serving warm.

Notes
