A comforting casserole that combines spicy buffalo chicken with sweet potatoes for a delicious twist on a family favorite.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the diced sweet potatoes in a pot of salted water until tender, about 15 minutes. Drain and set aside.
  3. Mix the shredded chicken with buffalo sauce and ranch dressing until thoroughly coated.
  4. Layer the mashed sweet potatoes in the bottom of a baking dish.
  5. Spread the buffalo chicken mixture over the sweet potatoes.
  6. Sprinkle the shredded cheese on top.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden.
  8. Garnish with chopped green onions before serving.

Notes

Can be paired with a side salad or crunchy celery sticks. Store leftovers in the fridge for up to 3-4 days or freeze for up to 2 months.
