Delightful butter pecan cookies with a crispy edge and soft, chewy center, perfect for sharing or enjoying warm.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the vanilla extract and the egg until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
  5. Gently fold in the chopped pecans and chocolate chips if using.
  6. Using a tablespoon, drop dollops of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until lightly golden around the edges.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. Freeze for longer storage.
