A comforting soup that combines the flavors of classic cabbage rolls in a simple, hearty stew with ground beef, cabbage, and rice.

Ingredients

  • 1 pound lean ground beef
  • 1 small head green cabbage, chopped
  • 1 cup rice (white or brown)
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the chopped cabbage, rice, tomato sauce, beef broth, paprika, salt, and pepper.
  4. Increase the heat and bring the mixture to a boil.
  5. Reduce to a simmer. Cover the pot and let it cook for about 30 minutes.
  6. Taste your soup and adjust the seasoning if needed.
  7. Dish out while steaming hot, garnishing with fresh herbs if desired.

Notes

This soup tastes even better as leftovers. Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
