Cabbage Rolls with Ground Beef

A comforting combination of tender cabbage leaves stuffed with a savory beef and rice filling, baked in tangy tomato sauce.

Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Carefully remove the leaves from the cabbage and blanch them in boiling water for about 2 minutes until pliable. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened, about 5 minutes.
  4. In a large bowl, combine ground beef, cooked rice, sautéed onion and garlic, salt, pepper, and paprika. Mix well.
  5. Take a cabbage leaf, place a portion of the beef mixture on it, and roll it up tightly.
  6. In a baking dish, spread some tomato sauce on the bottom. Place the cabbage rolls seam-side down and pour remaining tomato sauce and diced tomatoes over them.
  7. Cover the dish with foil and bake for 45 minutes. Uncover and bake for an additional 15 minutes.

Notes

Serve alongside a crisp salad or garlic bread. Leftovers can be refrigerated for 3 days or frozen for up to 3 months.
