A comforting twist on classic mac and cheese with spicy Cajun chicken and a crunchy breadcrumb topping.

Ingredients

  • 2 cups macaroni
  • 2 cups cooked chicken, diced
  • 2 tablespoons Cajun seasoning
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 1 tablespoon butter
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Breadcrumbs (optional for topping)

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. Create a roux by melting butter in a saucepan and whisking in flour.
  3. Add milk gradually to the roux, stirring until thickened.
  4. Stir in cheddar cheese until melted. Mix in Cajun seasoning, salt, and pepper.
  5. Combine cooked macaroni and chicken, then pour the cheese sauce over and mix well.
  6. Transfer to a greased baking dish and top with breadcrumbs, if using.
  7. Bake at 350°F (175°C) for 20 minutes until bubbly and golden.

Notes

For extra creaminess, add a splash of milk before serving. This mac and cheese is perfect when paired with a light green salad or a refreshing drink.
