A delightful explosion of flavors, this Cajun shrimp pasta combines bold spices with creamy goodness, perfect for a weeknight dinner or special occasion.

Ingredients

  • 8 ounces fettuccine or pasta of choice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sauté the chopped onion and bell pepper until soft, about 5 minutes.
  4. Stir in the minced garlic and shrimp, sprinkling the Cajun seasoning over the top. Cook until shrimp are pink, about 3-4 minutes.
  5. Pour in the heavy cream and add the cherry tomatoes. Let simmer for about 2-3 minutes.
  6. Toss in the cooked pasta, mixing until well combined. Season with salt and pepper to taste.
  7. Serve hot, garnished with freshly chopped parsley.

Notes

Pair with a crisp arugula salad and a chilled glass of Sauvignon Blanc. Store leftovers in an airtight container for up to 3 days.
