  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg yolk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 cup ricotta cheese
  • 1/4 cup mini chocolate chips
  • Zest of 1 orange (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Creaming together the softened butter and powdered sugar until smooth.
  3. Add the egg yolk, vanilla extract, and cinnamon; mix until combined.
  4. Gradually stir in the flour until the dough forms.
  5. Roll the dough into small balls and flatten them slightly.
  6. Place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until lightly golden.
  8. Mix ricotta cheese, orange zest, and chocolate chips in a separate bowl to make the filling while cookies cool.
  9. Fill half of the cookies with the ricotta mixture and top with another cookie to make sandwiches.
  10. Dust with powdered sugar before serving.
