  • 2 chicken breasts
  • 2 zucchinis, sliced
  • 1 cup fresh tomatoes, diced
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the skillet: In a skillet, heat olive oil over medium heat.
  2. Season and sear the chicken: Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side.
  3. Set the chicken aside: Remove the chicken from the skillet and set it aside on a plate.
  4. Sauté the zucchini: In the same skillet, add zucchini and cook until slightly tender, about 3-4 minutes.
  5. Add fresh tomatoes: Add fresh tomatoes and stir for another 2-3 minutes until they soften and release their juices.
  6. Combine chicken and cheese: Return the chicken to the skillet, and top with mozzarella cheese.
  7. Melt the cheese: Cover and cook for an additional 3-4 minutes, until the cheese is melted and bubbly.
  8. Garnish and serve: Sprinkle with fresh basil before serving.
