A delightful bread inspired by the famous Caprese salad, featuring sun-dried tomatoes, creamy mozzarella, and fragrant basil.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh mozzarella cheese, diced
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup olive oil
  • 1 cup milk
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the flour, baking powder, and salt in a large bowl.
  3. Stir in the sun-dried tomatoes, mozzarella, and basil.
  4. Whisk together the olive oil, milk, and eggs in another bowl.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
