A comforting dish of ravioli blanketed in a creamy carbonara sauce with crispy bacon.

Ingredients

  • Ravioli (fresh or frozen)
  • Bacon or pancetta
  • Eggs
  • Heavy cream
  • Parmesan cheese
  • Garlic
  • Salt
  • Black pepper
  • Chives or parsley (for garnish)

Instructions

  1. Cook the ravioli according to package instructions. Drain and set aside.
  2. Crisp the bacon in a pan over medium heat until crispy, about 5-7 minutes. Remove and set aside.
  3. Whisk together the eggs, heavy cream, grated Parmesan, salt, and pepper in a bowl until smooth.
  4. Sauté minced garlic in the same pan until fragrant, about 30 seconds.
  5. Combine the cooked ravioli and egg mixture in the pan, stirring gently to coat.
  6. Reintroduce the bacon to the pan and mix well.
  7. Serve immediately, garnished with chopped chives or parsley.

Notes

For variations, try adding sautéed mushrooms or spinach. Serve with a light arugula salad and chilled white wine.
