Delightful and healthy truffles made with fresh carrots, sweet dates, and shredded coconut.

Ingredients

  • 1 cup pitted dates
  • 1 cup shredded coconut
  • 1/2 cup nuts (e.g., walnuts or almonds)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a food processor, combine the grated carrots, pitted dates, nuts, vanilla extract, and salt.
  2. Blend the mixture until it is well combined and forms a sticky dough.
  3. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  4. Roll each ball in shredded coconut until fully coated.
  5. Place the truffles on a plate and refrigerate for at least 30 minutes.
