A vibrant and refreshing salad made with crunchy carrots and a tangy sesame dressing.

Ingredients

  • 2 large carrots
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the carrots using a vegetable peeler to remove the outer skin.
  2. Grate the carrots until shredded into thin strips.
  3. Combine the grated carrots in a medium-sized bowl.
  4. Create the dressing by mixing sesame oil, rice vinegar, and soy sauce in a small bowl.
  5. Sweeten the mixture by adding honey and stirring until dissolved.
  6. Grate some ginger and add it to the dressing.
  7. Dress the carrots by pouring the dressing over them.
  8. Toss the carrots gently in the dressing to coat them evenly.
  9. Add sesame seeds over the salad.
  10. Season with freshly ground black pepper.
  11. Garnish with chopped cilantro.
  12. Mix everything together thoroughly.
  13. Let the salad sit for a few minutes to meld the flavors.
  14. Serve immediately or refrigerate for an hour before serving.

Notes

This salad pairs beautifully with grilled meats or tofu and can be made ahead of time by pre-grating the carrots and mixing the dressing separately.
