Cauliflower Fried Rice

A nutritious twist on traditional fried rice using cauliflower for a healthy and flavorful dish.

Ingredients

  • 1 medium head of cauliflower, grated or riced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add mixed vegetables and stir-fry for a few minutes until tender.
  4. Push the vegetables to one side of the skillet and pour the eggs into the empty side, scrambling until cooked.
  5. Add the riced cauliflower and soy sauce to the skillet, mixing everything together until well combined.
  6. Cook for another 5-7 minutes, stirring frequently, until the cauliflower is tender but not mushy.
  7. Season with salt, pepper, and garnish with sliced green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in a skillet or microwave.
