Cauliflower Fried Rice

A healthier, vibrant twist on traditional fried rice, packed with flavor and nutrients.

Ingredients

  • 1 head of cauliflower, grated or riced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add minced garlic and diced onion to the skillet and sauté until the onion becomes translucent.
  3. Stir in the mixed vegetables, cooking until heated through.
  4. Push the veggies to the side of the skillet, then pour in the beaten eggs to scramble.
  5. Add the riced cauliflower and soy sauce, mixing everything together.
  6. Continue to cook for 5-7 minutes until the cauliflower is tender but has a bit of bite.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

For added flavor, consider adding a splash of sesame oil or crushed red pepper. Use a food processor for quicker ricing of cauliflower.
