A simple and healthy recipe for cauliflower gnocchi that’s gluten-free and bursting with flavor.

Ingredients

  • 1 head of cauliflower
  • 1 cup of all-purpose flour (more if needed)
  • 1/2 cup of grated Parmesan cheese
  • 1 large egg
  • Salt to taste
  • Pepper to taste
  • Olive oil for cooking

Instructions

  1. Steam the cauliflower until it’s soft and tender, about 8-10 minutes.
  2. Combine the riced cauliflower with flour, grated Parmesan cheese, the large egg, and a pinch of salt and pepper.
  3. Roll small portions of the dough into logs and cut into bite-sized pieces.
  4. Boil salted water and gently drop the gnocchi in; they’re ready when they float (about 2-3 minutes).
  5. Sauté in a skillet with olive oil until golden brown and slightly crispy (about 4-5 minutes).

Notes

Store leftovers in an airtight container for up to 3 days. Uncooked gnocchi can be frozen for up to 2 months.
