A lighter alternative to traditional gnocchi made with creamy cauliflower, capturing comfort and flavor in every bite.

Ingredients

  • 1 head of cauliflower
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut the cauliflower into bite-sized florets.
  2. Steam the cauliflower florets in a steamer basket for about 8-10 minutes until tender.
  3. Cool the steamed cauliflower for a few minutes, then mash or blend until smooth.
  4. Combine the cauliflower puree with flour, egg, salt, and pepper in a large mixing bowl.
  5. Mix until a dough begins to form, adding more flour if too sticky.
  6. Roll the dough into a rope about ½ inch thick, cut into small pieces, and use a fork to create indentations.
  7. Boil the gnocchi in salted water for 2-3 minutes or until they float to the surface, then drain.

Notes

Serve these gnocchi with marinara, sautéed garlic and spinach, or pesto. Store leftovers in an airtight container for up to 3 days.
