A creamy and cheesy twist on the classic mac and cheese, incorporating cauliflower for added nutrition and flavor.

  • 1 head of cauliflower, cut into florets
  • 8 oz macaroni or pasta of choice
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions; drain and set aside.
  3. Steam or boil the cauliflower florets until tender, then drain well.
  4. Create the cheese sauce by melting butter in a saucepan over medium heat. Stir in flour and cook for about a minute. Gradually whisk in milk, garlic powder, salt, and pepper until smooth.
  5. Add shredded cheese until melted and combined.
  6. Combine the cooked macaroni and cauliflower with the cheese sauce until well coated.
  7. Transfer the mixture into a baking dish, top with breadcrumbs if desired, and bake for 20-25 minutes until golden and bubbly.
  8. Serve hot and enjoy!

Notes

For a creamier texture, consider using half-and-half instead of milk. You can also boost nutrition by adding spinach or peas.
