Cheddar Oven Baked Potato Skins

Recreate the magic of pub-style potato skins with gooey cheddar cheese, crispy bacon, and fresh green onions.

Ingredients

  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes well under running water.
  3. Poke holes in them with a fork.
  4. Rub the potatoes with olive oil, then sprinkle with salt and pepper.
  5. Place the seasoned potatoes on a baking sheet and bake for about 45 minutes.
  6. Remove the potatoes from the oven and let them cool.
  7. Cut them in half lengthwise.
  8. Scoop out some of the potato flesh, leaving about 1/4 inch.
  9. Brush the insides with olive oil and sprinkle with salt.
  10. Fill each potato skin with cheddar cheese, bacon, and green onions.
  11. Return to the oven and bake for an additional 10-15 minutes.
  12. Remove from the oven and serve warm.

Notes

Customize your toppings with jalapeños or sautéed mushrooms for a vegetarian option.
