A delightful fusion of cinnamon rolls and cheesecake, these cookies are perfect for satisfying your sweet cravings.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Beat the softened cream cheese with 1/4 cup of granulated sugar and 1 tsp of vanilla extract until smooth and creamy.
  3. Cream together the softened butter, 1 cup of granulated sugar, and brown sugar until the mixture is light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  5. Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a separate bowl.
  6. Add the dry ingredients to the wet mixture, mixing until just combined.
  7. Portion out about 1 tsp of the cheesecake filling and set it aside.
  8. Using a cookie scoop or a tablespoon, portion out about 2 tablespoons of dough and flatten it slightly.
  9. Place the cheesecake filling in the center of each flattened dough piece, folding the dough around it to fully enclose the filling.
  10. Place the cookies on the prepared baking sheets, spaced about 2 inches apart.
  11. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  12. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with vanilla ice cream or caramel sauce for an extra treat. Store leftovers in an airtight container for up to 3 days.
