Delicious Cheesy Chicken Quesadillas perfect for family dinners or game nights, made with shredded chicken, cheese, and sautéed vegetables.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a skillet over medium heat. Sauté bell peppers and onions until soft, about 3-4 minutes.
  2. Combine shredded chicken, sautéed vegetables, and cheese in a bowl, fluffing everything together gently.
  3. Place a tortilla in the skillet, add a portion of the chicken mixture on one half, and fold the other half over.
  4. Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side.
  5. Repeat with remaining tortillas and filling until all are crispy and delicious.
  6. Slice cooked quesadillas into wedges and serve warm with sides of salsa or sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to restore crispness.
