Delightful quesadillas with a blend of sweet hot honey, savory chicken, and gooey cheese, served with a spicy jalapeño cream sauce.

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked, shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 tablespoons hot honey
  • 1 jalapeño, minced
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Mix the shredded chicken and hot honey in a bowl until evenly coated.
  2. Heat olive oil in a skillet over medium heat.
  3. Assemble the quesadilla by placing one tortilla in the skillet and layering with half of the chicken mixture and half of the cheese, then fold in half.
  4. Cook until golden brown on one side, then flip and cook the other side until melted.
  5. Create the Spicy Jalapeño Cream Sauce by mixing minced jalapeño, sour cream, lime juice, and a pinch of salt in a bowl.
  6. Serve warm with the cream sauce on the side for dipping.

Notes

For extra flavor, consider adding herbs or using different cheeses. Leftovers can be stored in an airtight container for 3 days.
