A comforting, cheesy quinoa and broccoli casserole that’s nutritious and delicious, perfect for family gatherings.

Ingredients

  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup vegetable broth
  • 1/2 cup milk
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse quinoa under cold water and combine with vegetable broth in a pot. Bring to a boil, then reduce heat and simmer until cooked, about 15 minutes.
  3. Combine the cooked quinoa, broccoli, shredded cheese, milk, olive oil, garlic powder, salt, and pepper in a large mixing bowl. Mix well.
  4. Transfer the mixture to a greased casserole dish and top with breadcrumbs.
  5. Bake in the preheated oven for 25-30 minutes until golden and heated through.
  6. Cool slightly before serving.

Notes

Rinse quinoa before cooking to remove bitterness. Don’t overcook broccoli; it should have a bite. Experiment with different cheeses.
