A delightful Cherry Galette that captures the essence of summer with its flaky crust and juicy cherry filling.

Ingredients

  • 2 cups fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and salt in a mixing bowl and toss gently.
  3. Roll out the pie crust on a parchment-lined baking sheet to about 12 inches in diameter.
  4. Spoon the cherry mixture into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the cherries, pleating it as you go.
  6. Brush the crust with the beaten egg and sprinkle with coarse sugar.
  7. Bake for 25-30 minutes until golden brown and bubbly.
  8. Cool slightly before slicing and serving.
