Deliciously chewy banana bread cookies that are soft, sweet, and perfect for any time of day.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix together the mashed bananas and melted butter until smooth.
  3. Stir in the brown sugar, egg, and vanilla extract until well combined.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in chocolate chips if using.
  6. Drop tablespoon-sized portions onto the prepared baking sheet, leaving space for spreading.
  7. Bake for 10-12 minutes, or until golden brown. Cool on a wire rack.
