Deliciously chewy cookies filled with molten Biscoff spread and chocolate chips, perfect for a sweet treat.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Biscoff spread
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. Cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the flour mixture, mixing until just combined.
  6. Stir in the Biscoff spread and chocolate chips.
  7. Scoop tablespoons of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes, until the edges are set and centers are soft. Let cool slightly before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container for up to a week, or freeze for up to a month. Don’t overbake for maximum gooeyness!
