Delightful chewy coconut cookies that bring a taste of the tropics with every bite.

  • 1 cup shredded coconut
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter-sugar mixture, mixing until well incorporated.
  4. Combine the flour, baking powder, salt, and shredded coconut in another bowl.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a greased or lined baking sheet, spaced about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
