Delicious Chicken Enchiladas filled with tender shredded chicken, rich enchilada sauce, and melted cheese, perfect for family gatherings.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, sliced avocado

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the olive oil over medium heat, then add the chopped onion and sauté until soft.
  3. Mix the shredded chicken, sautéed onion, cumin, and half of the enchilada sauce in a bowl. Add salt and pepper to taste.
  4. Spoon the chicken mixture onto each tortilla, sprinkle with cheese, and roll them up.
  5. Place the rolled enchiladas seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Serve hot, garnished with optional toppings like sour cream, cilantro, and sliced avocado.

Notes

For added flavor, use a rotisserie chicken, and consider adding jalapeños for some heat. Keep tortillas warm to prevent tearing.
