  • 2 eggs
  • 1 cup chicken broth
  • 1 lemon (juiced)
  • 2 tablespoons butter
  • 2 tablespoons olive oil

  • Fresh parsley for garnish
  • Lemon slices for garnish

Instructions

  1. Pound the chicken breasts until about 1/2 inch thick and season with salt and pepper.
  2. Dredge each breast in flour, shaking off the excess.
  3. Beat the eggs in a bowl. Dip each floured chicken breast into the egg, ensuring an even coverage.
  4. Heat butter and olive oil in a large skillet over medium heat.
  5. Add the chicken and cook until golden brown, about 3-4 minutes per side.
  6. Remove the chicken and set aside.
  7. Add chicken broth and lemon juice to deglaze the skillet, scraping up any browned bits.
  8. Return chicken to the skillet and simmer for 5 minutes.
  9. Serve garnished with fresh parsley and lemon slices.
