  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pot over medium heat. Add the carrots, celery, onion, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Add the thyme and rosemary, allowing them to bloom and release their fragrant oils for about a minute.
  3. Pour in the chicken broth and bring to a boil, letting the exciting aromas fill your kitchen.
  4. Cook the gnocchi according to package instructions until they float to the top.
  5. Reduce the heat and stir in the heavy cream, followed by the shredded chicken and fresh spinach. Allow the spinach to wilt.
  6. Season with salt and pepper to taste.
