A vibrant and nutritious Chicken Salad Bowl filled with succulent chicken, fresh vegetables, and creamy avocado, perfect for summer gatherings.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (pounded to even thickness)
  • 2 tbsp olive oil (for cooking chicken)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 6 cups mixed greens (spinach and arugula)
  • 2 cups cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 red bell pepper (sliced)
  • 1/2 red onion (thinly sliced, soaked in cold water for 10 minutes)
  • 1 avocado (sliced)
  • 1/4 cup sunflower seeds (toasted)
  • 1/4 cup olive oil (for dressing)
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 clove garlic (minced)
  • 1 tsp honey

Instructions

  1. In a small bowl, combine garlic powder, paprika, salt, and black pepper.
  2. Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 3/4 inch.
  3. Rub the seasoning mixture over both sides of each chicken breast.
  4. In a large skillet, heat olive oil over medium-high heat until shimmering.
  5. Add the seasoned chicken breasts to the skillet. Cook undisturbed for 6-8 minutes, then flip and cook for another 6-8 minutes until cooked through.
  6. Transfer the cooked chicken to a cutting board and let it rest for 5 minutes.
  7. While the chicken rests, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, honey, salt, and pepper in a small bowl.
  8. Slice the chicken against the grain into 1/2-inch strips.
  9. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red bell pepper, red onion, and sunflower seeds.
  10. Pour the dressing over the salad and toss gently to coat.
  11. Divide the salad among four bowls and top with sliced chicken and avocado.
  12. Serve immediately for the best texture and flavor.
