A comforting and flavorful Chicken Satay recipe marinated in a coconut-infused mix and served with a creamy peanut sauce.

Ingredients

  • 2 Chicken breasts
  • 1/4 cup Peanut butter
  • 1/4 cup Soy sauce
  • 1/2 cup Coconut milk
  • 2 tbsp Lime juice
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 2 tbsp Brown sugar
  • Skewers (wooden or metal)

Instructions

  1. Cut chicken breast into strips and marinate in a mixture of soy sauce, coconut milk, lime juice, minced garlic, ginger, and brown sugar for at least 30 minutes.
  2. Thread the marinated chicken onto skewers. Soak wooden skewers in water for 30 minutes if using to prevent burning.
  3. Preheat the grill over medium heat for even cooking.
  4. Grill the chicken skewers for about 6-8 minutes on each side or until fully cooked, flipping halfway through.
  5. Serve the grilled chicken skewers with a luscious peanut sauce for dipping.

Notes

For best flavor, marinate the chicken longer and use a meat thermometer to ensure it reaches 165°F.
