A delightful Chicken Shawarma recipe that combines juicy, tender chicken with warm pita and a variety of toppings, infused with aromatic spices.

Ingredients

Scale
  • 2 lbs chicken thighs, boneless and skinless
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Pita bread or flatbreads for serving
  • Toppings: sliced cucumbers, tomatoes, lettuce, tahini sauce, or yogurt

Instructions

  1. Whisking Up the Marinade: In a large bowl, combine garlic, cumin, coriander, paprika, turmeric, cinnamon, olive oil, lemon juice, salt, and pepper. Whisk until the mixture is well blended and fragrant.
  2. Marinating the Chicken: Add chicken thighs and coat them well with the marinade. Cover the bowl and refrigerate for at least 1 hour, preferably overnight, to let the flavors meld beautifully.
  3. Preheating Your Cooking Surface: Preheat your grill or a skillet over medium-high heat. This step ensures that the chicken gets that perfect sear.
  4. Cooking the Chicken: Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and golden brown.
  5. Resting and Slicing: Remove the chicken from heat and let it rest for a few minutes. When ready, slice the chicken thinly.
  6. Final Assembly and Serving: Serve the sliced chicken in pita bread or flatbreads, and garnish with your choice of toppings.

Notes

Marinate longer for maximum flavor, and use a meat thermometer to check for safety.
