A quick and delicious chicken stir fry, packed with fresh vegetables and rich flavors.

Ingredients

  • 1 lb chicken breast
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 cups mixed vegetables (bell pepper, broccoli, carrots)
  • 2 medium potatoes, thinly sliced
  • 2 tbsp oil (vegetable or sesame)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Marinate the chicken: Cut the chicken into bite-sized pieces and marinate it with soy sauce, minced garlic, and ginger for at least 15 minutes.
  2. Prepare the potatoes: Slice the potatoes thinly and parboil them until they’re tender.
  3. Heat the oil: In a large pan or wok, heat up a drizzle of oil over medium-high heat.
  4. Cook the chicken: Add the marinated chicken to the hot oil and stir-fry until cooked through (5-7 minutes).
  5. Set aside the chicken: Remove the chicken from the pan and set aside.
  6. Crisp up the potatoes: In the same pan, add the parboiled potatoes and stir-fry until golden and crunchy.
  7. Add the vegetables: Toss in bell peppers, broccoli, and carrots, and stir-fry until tender-crisp.
  8. Combine ingredients: Return the chicken to the pan and mix everything together thoroughly.
  9. Season to perfection: Season with salt and pepper, and stir-fry for an additional 2 minutes.
  10. Serve hot and enjoy!

This dish pairs beautifully with jasmine rice or quinoa.
