A flavorful and creamy Chicken Tikka Masala that brings warmth and joy to gatherings, served over basmati rice or with naan.

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: In a bowl, mix yogurt, lemon juice, minced garlic, grated ginger, and spices—cumin, coriander, paprika, garam masala, and turmeric. Add the chicken thighs and coat thoroughly. Cover and marinate for at least 1 hour, or ideally overnight in the refrigerator.
  2. Sauté the Onions: Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown.
  3. Brown the Chicken: Add the marinated chicken to the pan, shaking off excess marinade. Cook until browned on all sides, about 5-7 minutes.
  4. Combine with Tomatoes: Stir in the crushed tomatoes and bring to a gentle simmer.
  5. Add the Cream: Once bubbling, pour in the heavy cream and season with salt to taste.
  6. Allow to Simmer: Continue to cook for an additional 10 minutes, allowing the sauce to thicken.
  7. Final Touches: Garnish with freshly chopped cilantro before serving.

Notes

For a lighter version, substitute half and half or coconut milk for heavy cream.
