  • 1 can chickpeas, drained and rinsed
  • 2 medium beets, cooked and diced
  • 1 cup feta cheese, crumbled
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • To taste Salt and pepper
  • Fresh parsley, for garnish

Instructions

  1. Begin by selecting your beets. If you’re using fresh beets, boil or roast them until tender, then allow them to cool before dicing.
  2. Open the can of chickpeas, then drain and rinse them thoroughly under cold water.
  3. In a large mixing bowl, combine the chickpeas, diced beets, crumbled feta cheese, and sliced red onion.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  5. Pour the dressing over the salad mixture and gently toss everything together until well coated.
  6. Finally, sprinkle fresh parsley over the top for a burst of freshness. Serve immediately, or let it chill in the fridge for about 30 minutes.

Notes

You can store leftover salad in an airtight container in the fridge for up to 3 days. Flavors develop more over time, making it great for meal prep.
