Delicious and nutritious wraps filled with roasted cauliflower and creamy chickpeas, perfect for any meal.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas or wraps
  • Your favorite toppings (e.g., lettuce, tomato, avocado, sauce)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the seasoned cauliflower on a baking sheet and roast for about 25 minutes or until tender and golden.
  4. Mash the chickpeas with a fork until slightly chunky.
  5. Mix the roasted cauliflower with the mashed chickpeas.
  6. Warm the tortillas in a dry skillet for a minute.
  7. Spoon the chickpea and cauliflower mixture into the warm tortillas.
  8. Add your favorite toppings and roll up the wraps tightly.
  9. Serve the wraps hot or cold.

Notes

Leftover wraps can be stored in an airtight container in the fridge for up to 3 days. Reheat as desired.
