Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons chipotle in adobo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon garlic powder
  • 4 sandwich buns, toasted
  • 1 cup lettuce, shredded
  • 1 tomato, sliced
  • 1 avocado, sliced

Instructions

  1. Mix the chipotle in adobo, olive oil, garlic powder, cumin, salt, and pepper to create a marinade.
  2. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat the grill to medium-high heat (about 375°F).
  4. Grill the marinated chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink inside.
  5. Prepare the lime mayo by mixing mayonnaise, lime juice, lime zest, and garlic powder in a small bowl.
  6. Let the chicken rest for 5 minutes before slicing to allow those juices to redistribute.
  7. Spread lime mayo on the toasted buns, then layer with lettuce, sliced tomato, grilled chicken, and avocado.
  8. Top with the other half of the bun and serve immediately, savoring the delightful blend of flavors.
