A comforting dish of roasted chicken thighs coated in honey and chipotle, served alongside creamy smoked gouda mashed potatoes.

  • 4 chicken thighs
  • 2 tablespoons honey
  • 1 tablespoon chipotle powder
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and chopped
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, combine honey, chipotle powder, salt, and pepper.
  2. Rub the chicken thighs with the honey-chipotle mixture, then place them on a baking sheet.
  3. Bake for 25-30 minutes or until cooked through.
  4. Boil the potatoes in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes, then return them to the pot.
  6. Mash the potatoes with milk, smoked gouda, and butter until smooth.
  7. Serve the chicken alongside the mashed potatoes and enjoy!

Notes

For extra flavor, marinate the chicken overnight in the honey-chipotle mixture.
