  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix together olive oil, smoked paprika, cumin, garlic powder, salt, and pepper in a bowl.
  3. Coat each chicken breast thoroughly with the spice mixture.
  4. Grill the chicken for about 6-7 minutes on each side, until reaching an internal temperature of 165°F (75°C).
  5. Let the chicken rest for a few minutes before slicing.
  6. Layer cooked rice, black beans, diced tomatoes, shredded lettuce, sliced chicken, and a drizzle of chipotle ranch dressing in each tortilla.
  7. Roll up the tortilla tightly to enclose the fillings.
