A delightful blend of chocolate chip cookies and creamy cheesecake, these bars are an easy-to-make dessert that’s perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix together flour, baking soda, and salt. Set aside.
  3. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Beat in the vanilla extract and egg until airy, then gradually blend in the dry ingredients to form the dough.
  5. Stir in the chocolate chips.
  6. Spread half of the cookie dough evenly into the baking pan.
  7. In a separate bowl, beat cream cheese, powdered sugar, vanilla extract, and egg until smooth.
  8. Pour the cheesecake layer over the cookie base and spread evenly.
  9. Drop spoonfuls of the remaining cookie dough over the cheesecake layer.
  10. Bake for 30-35 minutes, until the edges are golden and the center is set.
  11. Allow to cool completely before slicing into bars.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
