Delightful cupcakes bursting with juicy strawberries and rich chocolate ganache, perfect for any celebration.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, chopped
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the softened butter, eggs, vanilla extract, and milk to your dry ingredients. Mix until just combined.
  4. Carefully fold in the chopped strawberries and chocolate chips.
  5. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let the cupcakes cool completely.
  8. For the ganache, heat the heavy cream until it simmers. Remove from heat, add the chocolate chips, let sit for a minute, then stir until smooth.
  9. Dip the tops of the cooled cupcakes into ganache or drizzle it on top. Garnish with additional strawberries if desired.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days.
