Delicious toffee cookies with a chocolate dip, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits
  • 1 cup chocolate chips (for dipping)
  • Extra toffee bits for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt, and then gradually add to the wet mixture.
  5. Fold in the toffee bits until evenly distributed.
  6. Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are golden brown and centers are soft.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. While cooling, melt the chocolate chips until smooth.
  10. Dip cooled cookies halfway into melted chocolate and sprinkle with extra toffee bits.
  11. Allow cookies to set on parchment paper until chocolate is firm.

Store cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months. Use softened butter for easy creaming, and consider flavor variations like milk chocolate chips or sea salt.
