Indulge in luxurious chocolate mousse cups, blending bittersweet and milk chocolate with airy meringue and crushed cookies for a delightful dessert.

Ingredients

  • 8 oz bittersweet chocolate (min 70% cocoa solids), chopped
  • 8 oz milk (or semisweet) chocolate, chopped
  • 1 ¼ cups heavy cream
  • 1 tbsp espresso (can substitute rum or cognac)
  • 4 eggs
  • 2 tsp vanilla extract
  • â…› tsp kosher salt
  • ½ cup sugar
  • 1 ½ cups crushed chocolate cookies
  • Shaved chocolate, for garnish
  • Whipped cream, for garnish

Instructions

  1. Melt the Chocolates by putting bittersweet and milk chocolate in separate heatproof bowls. Heat heavy cream in a saucepan until bubbles just begin to form along the edges. Pour ¾ cup over the bittersweet chocolate and the remaining ½ cup over the milk chocolate. Let sit a few minutes to melt, then whisk each until smooth.
  2. Prepare the Egg Yolks by separating eggs, placing 2 yolks in the bittersweet chocolate bowl and 2 yolks in the milk chocolate bowl. Whisk the yolks into each chocolate mixture until smooth.
  3. Add Flavor Enhancements by whisking espresso into the bittersweet chocolate mixture and vanilla into the milk chocolate mixture; set both aside.
  4. Beat the Egg Whites by adding salt to the egg whites and beating with a handheld mixer until soft peaks form. With the mixer running, slowly add sugar, and continue beating until peaks are glossy and just stiff.
  5. Combine with Meringue by scooping half the meringue into the bittersweet chocolate mixture and folding in until just combined. Divide this mousse among 8 small glasses or jars. Sprinkle with 2 tablespoons crushed chocolate cookies.
  6. Finish the Milk Chocolate Mousse by adding the remaining meringue to the milk chocolate mixture and folding until evenly combined. Spoon on top of the crushed cookie layer.
  7. Chill Until Firm by covering the cups and chilling until firm, at least 3 hours.
  8. Garnish and Serve by topping each parfait with 2 tablespoons crushed cookies. Garnish with whipped cream and chocolate curls before serving.

Notes

Ensure good quality chocolate is used for the best flavor; refrigerate the mousse cups tightly covered for up to 2 days.
