Ingredients

Scale
  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, etc.)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the sliced chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add the garlic and ginger, and sauté for another minute until fragrant.
  4. Add the mixed vegetables and cook until they begin to soften, about 3-4 minutes.
  5. In a small bowl, mix the soy sauce, oyster sauce, and cornstarch with a tablespoon of water.
  6. Pour the sauce over the chicken and vegetables, and stir to combine.
  7. Cook for an additional 2-3 minutes until the sauce thickens.
  8. Season with salt and pepper to taste.
  9. Serve hot over rice or noodles.

Notes

For extra flavor, marinate the sliced chicken in soy sauce and a touch of ginger for 15-30 minutes before cooking. This dish is highly adaptable; feel free to use shrimp or tofu instead of chicken.
