Delightful muffins that combine the classic flavors of French toast in a fun, portable form.

  • 1 loaf of French bread
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup melted butter
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Cut the French bread into small cubes and place in a large mixing bowl.
  3. Whisk together eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt in another bowl.
  4. Pour the egg mixture over the bread cubes and stir gently to combine.
  5. Allow the mixture to sit for about 10 minutes.
  6. Mix together melted butter, brown sugar, and cinnamon for the topping.
  7. Spoon the bread mixture into the muffin tin cups, filling them about 3/4 full.
  8. Drizzle the cinnamon sugar mixture over the top of each muffin.
  9. Bake in the preheated oven for 18-20 minutes or until golden brown.
  10. Let them cool for a few minutes before serving.

Notes

These muffins pair wonderfully with whipped cream or maple syrup.
