Delightfully fluffy muffins topped with a sweet cinnamon-sugar sprinkle, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. In a small bowl, mix the remaining granulated sugar with the ground cinnamon for the topping.
  7. Sprinkle the cinnamon sugar mixture over the muffin batter in each cup.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For perfect domed muffins, avoid overmixing the batter. Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
